With my $300,000,000,000,000.00 I purchased the following… I started out with things that were generally good for humanity, but then I got a few things for myself.
By making your own pasta, you not only get the freshest pasta possible but you also regulate what goes into the pasta. You can regulate the types of eggs, type of wheat, and herb that go into your very own pasta.
First, put your eggs into a mixing bowl then gently beat the eats with a fork. We have find that it works best to use equal part eggs to flour. We used three eggs for this recipe.
Next you are going to want to make a well in the flour, you will be pouring the eggs into the well. We place our three cups whole wheat flour into a large bowl, but you can also simply place the flour on your cutting board.
Next, stir into the flour from the bottom of the well until the dough is smooth or shiny. With your hands, gradually incorporate the flour from the outside of the well toward the center, kneading gently until the mass of dough comes together. It is possible you may need to add more flour, or all of the flour may not be able to come together with the dough. The can vary depending on the humidity and the size of the eggs you picked to use. If you find that the dough is sticky, knead more flour into it until the texture becomes less sticky. After the dough is the correct texture leave it sit for about half an hour. This helps to come the gluten in the flour.
If you have a pasta machine, the next step is to press the pasta. We found that it is best to press the pasta multiple times to get to a good thickness. If you do not have a pasta maker, it’s still pretty simple. You should put some flour down on your surface (table, cutting board, etc). Then simply use a roller and roll the dough out to the thickness/thinness you desire.
We made our pasta into sheets. Each sheet will be used to put together the Spinach Tofu Lasagna.
Our lasagna had layers of tofu, mushrooms, Swiss and Gouda cheese, and plenty of spinach. Of course the ingredients you use in the lasagna are up to you!
